Anyone who has tasted an aged cheese may have noticed the presence of small crystals within the paste. These tiny granules, far from being artificial additives, are instead the result of a natural process that takes place during the cheese’s maturation. But what exactly are they? The crystals found in aged cheeses can give the palate a sweet or salty sensation, but this perception is actually misleading. They are not additives, but natural aggregations resulting from the “breakdown” of the cheese’s proteins. Their formation begins during maturation itself, when the cheese proteins start to cluster together, creating a nucleus. This nucleus progressively attracts other molecules, increasing in size and leading to the formation of crystals. There are mainly two types: tyrosine crystals and calcium lactate crystals.

Tyrosine crystals are composed of an amino acid that originates from the breakdown of casein, a milk protein. These crystals, typical of long-aged cheeses such as Swiss varieties and French cooked-paste cheeses, appear white, shiny, and hard, and they form inside the paste. In contrast, calcium lactate crystals, which are salts, tend to be less visible, paler, and softer. They are commonly found on the surface of cheeses like Cheddar, where they can form a thin coating.

But are these crystals safe? The answer is absolutely yes. Far from being harmful to health or to the integrity of the cheese, the crystals are a natural phenomenon of the maturation process. In the past, some producers tried to avoid them for aesthetic reasons, as they could be mistakenly perceived as molds or imperfections in the paste. Today, however, they are widely appreciated by both consumers and industry experts. Their presence adds a crunchy element and a unique complexity to the cheese’s texture, making it even more satisfying to taste.

The crystals in cheese, therefore, not only represent a distinctive sign of a well-conducted maturation, but they also enhance the sensory experience, offering a pleasant combination of softness and crunchiness.
